Look out world! In one of the last strongholds of macho culture, there is a new generation of Mexican women that are independent, educated, single and embracing business enterprises. Meet the dynamic Andrea Guelaguetza Herrera, owner/operator of the Casa Rosetta Restaurant, La Penita.  Not only does this 26 year old have a dream but Andrea has the talent, initiative and motivation to achieve her dream.

A native of Puerto Vallarta, Jalisco, Andrea was independent from an early age. “My parents have always been very supportive of my ideas, “ said Andrea.  At age 17 she decided to experience another culture and moved to California, USA. After a couple of years she felt ready to get serious about a career and returned to Mexico. “I’ve always been fascinated with food preparation and dining in restaurants,” explained Andrea. “I feel that there is a difference between eating and dining. Dining is an art that when you eat it pleases the palate, satiates the appetite, and it’s a happy experience.”

It was a perfect fit for Andrea to enroll in a university program for culinary arts. “I enjoy cooking! But it was part of my business plan to be able to perform any task at my future restaurant.”  After graduation three years ago, she helped her brother set up a business to learn hands on. Andrea was still searching for just the right location for her new business. “I was on vacation in Jaltemba Bay with my three best friends. Yes, I was checking out the type of restaurants in the area to see if there might be a market for my vision of a restaurant. To me, a restaurant is a kind of living fantasy in which the diners are the most important members of the cast. I needed a particular venue that would meet my criteria.” 

The building on Calle Salina Cruz #4 (the first south street from the La Penita malecon) appealed to Andrea. “I immediately loved the location and its simple design that fit my vision.” After negotiating with the owners, Andrea began establishing her business in earnest. “The challenges were varied and sooo rewarding!”   

Andrea chose a stylistic four petal flower for her logo to go with the name. “I wanted to imply the friendliness and welcoming nature of a Mexican home so I decided to use casa in the name. The rosetta portion symbolizes the close bond of the four friends who formed a partnership for the restaurant.  The menu is a reflection of traditional Mexican cuisine from across the country.  “I am a foodie as a hobby. I love dining in new restaurants.  If a dish appeals to me, I come back to my kitchen and tweak it until I have my original version.” The current menu will be revised according to customer preference this winter.  There is a pleasing variety that includes appetizers, beef, shrimp, pasta as well as desserts.

Since the proprietress is young, hip and professionally trained, there are wonderful libations in the well stocked bar.  Add to that a han

dsome professional bartender, and let the good times flow!  Whether you’re in the mood for a favorite wine, beer or cocktail, or feeland want to try an exotic  concoction, Casa Rossetta is a great place to relax and enjoy the evening.

Casa Rosetta provides simple elegance and moody ambiance that makes it perfect for date night. You’ll be pleasantly surprised at the reasonable prices. Last season Andrea provided background music for the Friday and Saturday night diners; she hopes to continue entertainment this winter.  You can be assured that the staff of seven employees strictly follow and adhere to health protocols.

An exciting entertainment option that Casa Rosetta is embracing this year is showcasing local Mexican artists in the second floor gallery. The next exhibit is by the wonderful portrait painter, Bauti.
